My Love for Food. How it Began.

Patsy's Porkers has two meanings for me.

First, the name honors my grandfather Pasquale "Patsy" Cubiotti. My grandfather raised me when I was very young and I will always remember his strong work ethic and his passion for family. You could say that he instilled in me the love I have for my famly and friends.

In 1910, Patsy came to Ellis Island from Rome to build a life for his bride-to-be, Gracia Grasta, who was born in Caltanissetta, Sicily. He came with nothing and built a beautiful life, raising 6 children. I love him and miss him dearly.

Second, Patsy's Porkers honors my grandfather's passion for food. He showed me as a child how to prepare traditional Italian food, sharing some of his favorites. One of them was pork, which is a mainstay in any Italian kitchen.
It's what adds the "fla-vah" (flavor). I have tried to incorporate his favorites – as well as mine – into our menu.
